Ingredients 2 cups water 3/4 teaspoon salt, divided 1 cup quinoa, rinsed well 1/4 cup lemon juice 3 tablespoons extra-virgin olive oil 2 small cloves garlic, minced 1/4 teaspoon freshly ground pepper 1 6- or 8-ounce package baked smoked tofu diced 1 small yellow bell pepper, diced 1 cup grape tomatoes, halved 1 cup diced cucumber 1/2 cup chopped fresh parsley Directions 1. Ingredients 3 cups of fruit (fresh or frozen) 1/4 cup sugar/agave (optional) Directions 1. In a food processor, combine fruit until blended smooth (will be thick) 2. Pour half the mixture on to a tray with parchment paper 3. Bake at 175 ºF for 2-3 hours 4. Let cool and then cut in to strips or shapes 5. Enjoy!
