Citrus and Beet Spinach Salad

Ingredients:
- 14 oz. Can of beets
- 2 Large navel oranges
- 1 Small red onion, thinly sliced
- 10 oz. Spinach leaves
Vinaigrette
- 1⁄4 cup Canola oil
- 1⁄4 cup Red wine vinegar
- 1 tbsp Raspberry jam
- 3⁄4 cup Walnut pieces, toasted
Directions:
- Drain and quarter beets.
- Peel and section the navel oranges.
- Toss all ingredients except dressing in a large bowl.
- Mix oil, vinegar, jam and stir.
- Add dressing to vegetables and top with walnuts and serve.
