Veggies-in-a-Blanket

A vegan recreation of classic pigs-in-a-blanket. Perfect for gatherings and parties, or for a healthy lunch.

Ingredients

1 whole wheat tortilla
2 tablespoons of hummus
1/3 cup spinach
1/8 cup shredded carrots

Directions

1. Spread the hummus on the tortilla.

2. Add spinach and carrots to tortilla.

3. Roll the tortilla tight; use a dab of hummus to seal the wrap.

4. Cut into sushi size pieces and enjoy!
